What are the best practices when creating API products?

I wanted to know some of the best practices when it comes to creating API products.

I am confused about whether to create separate products and apps for different environments (for different configuration purposes) or create a single API product and enable it for all the environments.

Any suggestions would be appreciated.

I would suggest to use separate product and app for separate environment.

This will provide you flexibility and more security.
