The person who initially set up AppSheet is no longer working for our company, and I need to take complete ownership of the AppSheet environment. I am able to log in with the former root user’s credentials. Is there a procedure i can follow to designate myself as the root user?
First, I would recommend some company specific account - not tied to any single person - be created and transfer ownership to that. If the apps are already under such an account, then change the password and continue normally. This will avoid the problem again when you decide to move on to bigger and better things.
To transfer ownership, I have two possibilities:

Contact AppSheet support to see if they could do something for you in one go.

Create the account you want to transfer ownership to and than have the “root” user grant co-author privileges to this new account for each app. Then follow steps in this article, Transfer an app between user accounts

In fact, Teams: The Essentials - AppSheet Help says explicitly:
- Contact AppSheet Support or your sales representative to assign team root and admin accounts.
