Sorry to be the bearer of bad news, but it’s not easy, honestly. It’s largely a matter of exporting all those users’ data and reimporting it. There are various third-party tools, that purport to make it somewhat easier, at least for some parts of the data, but it’s imperfect at best. Examples include:
For Google Drive data: DryvIQ (formerly SkySync) is probably the most well known. https://dryviq.com
For Gmail data: Google’s GWMME tool–About GWMME - Google Workspace Admin Help
etc.
Getting help with this from one of the larger Google consultants/resellers like Amplified IT or Burwood might make a whole lot of sense.

To add to what @icrew outlined, removing a domain from Google Workspace is a very tricky process.
If not done correctly, there is a serious risk of losing access to data. Not only on core things like email delivery but also on 3rd party systems (any system accessed via a “sign-in with Google” option).
It will also complicate access to other Google Services like Google Analytics/Google Ads.
So it’s best to contact a Google Reseller or Partner to handle the process.
