Is there any way to connect a Decimal or Number type field to a conventional scale? The requirement is that the app avoid manual typing and instead be a field that reads automatically from a scale.

Nope, unless the scale can be connected to the user’s device via Bluetooth, and sends the reading as simple text.
AppSheet has no support for input devices.
