By default timeout period in apigee is 55 seconds, I want to increase this value to upto 2 minutes.

I saw in edge we can configure message processor properties, but I am not getting any property inside overrides.yaml and I don’t have folder inside /opt namely apigee.

Please refer to this documentation here : https://cloud.google.com/apigee/docs/api-platform/reference/endpoint-properties-reference . You can set io.timeout.millis in proxy to configure this. Setting at global level is not a good practice.
