Is can you follow social media profiles with an app by e.g. setting up an automation by which only certain parts of the page are crawled and if a previously defined pattern is detected (new pictures of a user in his timeline e.g.) these are automatically forwarded to google sheets e.g. ?

There is a number of social media automation services like integromat.com that you can use for this purpose. Or you can develop your own Apps Script and communicate with the social network through its own API.
AppSheet doesn’t provide this behavior itself.
