If I chose ‘Google’ in the Authentication Provider, does that mean that Appsheet will only accept sign-ins from Gmail? I want to know would other emails work, like outlook emails?
Also, does enabling ‘Allow all signed-in users’ means that everyone I shared the app with can access it and then I can just put a security filter to limit some access? Can somebody pls answer in simple words? Thanks!

Not just Gmail, but yes, only google domain emails.
The list of available auth providers are in that list that you highlighted, no other auth providers are supported.
“Allow all signed-in users” mean that anyone can use your app, without you having to explicitly add them to the users list.

Yes, it is a compromise on your app’s security, to provide the benefit of not having to manually add all users.
