I have a requirement for a timesheet capturing App which will have 700-800 users having daily 7000-8000 rows in a google sheet having 15-20 columns. The App will also have administrative options for employee and module mapping, module and activity mapping, addition / deletion of employees, reports, analytics.
I request feedback from experts whether AppSheet app could be a prefered / recommended solution. What about the application performance when the data will grow, speed, stability and scalability, etc.

With 20 cols and avg. 7500 rows per day, means 150,000 cells/day. Considering 5M cell limit of a Google Spreadsheet, this means that roughly you will hit the quota around 33-34 days. In this case, I will recommend using Cloud SQL as a back-end database. Other operations that you have asked for i.e. employee and module mapping, module and activity mapping, addition / deletion of employees, reports, analytics are totally possible and not even a problem.
