I’d like to force the UI to capture photos in 1:1 ratio. The iphone doesn’t seem to give me any choices for this. Does the app have any control over the camera when it is capturing?
No, it does not.

As @WillowMobileSys guided, there is no native option in AppSheet to control the image size.
You may want to evaluate the following tip. Please carefully read evaluate and test all the impacts mentioned in the tip for your organization policies such as the new URL of edited image being stored in the API provider’s servers before embracing the solution.
