Hello, is it possible to include images or icons in appsheet notifications ?

No I believe its just text. Consider using email workflows if you need to send someone an image. Or alternatively send them a URL with a Deep Link to the correct part of the App

Thanks, I would love to have the ability to add an icon or format the text in a notifcation - for example if something was urgent you could add an icon or change the colour

You may try using emojis and <> expression in notification.
