Firstly, why not make the Source Id in the STORAGE settings editable like it is on workflow templates?

I need to to point my app to a different version of the same source file but it seems I have to manually set every table (I have 12) to the new source. Is there a better way?

No, unfortunately there’s no way to update the Source Id for all tables at once. The editor makes you do each table separately.
