How can I change the target endpoint depending on the deployment?

I have 3 environments, test, acceptance and production. Depending on the which environment I have deployed my proxies I also want to change the target endpoint.

Is this possible within one proxy or should I have different proxies per endpoint?

Yes, It’s possible using one proxy. You can do that easily, Use target servers option in Apigee Edge. Here is the 4MV4D & Community article regarding same.
