Excluding a folder and all it's children from a logging sink

Hello,

I am trying to create an org wide logging sink but exclude a specific folder and all the folders and projects within it. I have not been able to find a way to do this using the exclusion filters.

Is there a way to do this? Any help would be greatly appreciated!
