I have a data sheet with multiple worksheets and I need users to fill in data via the Appsheet UI into the most recent worksheet.
A new worksheet is added every week to the data sheet. Is there a way to Appsheet can automatically source from the newest worksheet once it is added to the data sheet? Note that the data structure is the same on all the worksheets
Each sheet is a “Table”. Appsheet cannot add new Tables automatically, or on a schedule. These things must be done manually in the editor.
What you are describing is highly inadvisable. I’d recommend setting up one single sheet/Table, and including a date/week column in it.

What about reversed scenario:
Users add data to only table
Some data rows moved to other sheets weekly
